Delicious pan-fried Brussels sprouts with chorizo and chestnuts

For some people, having to eat Brussels sprouts is the stuff of nightmares. Happily, I’m not one of them – and I’m guessing you aren’t either!

I believe Brussels sprouts are a bit of an unsung hero when it comes to side dishes. I’ve dressed them up and made them ‘fancy’ and have served them in classic ways too. Some of my recipes have been met with upturned noses, but others — like this pan-fried Brussels sprouts with chorizo and chestnuts — have been considered winners.

A couple of things you’re definitely going to like about this dish are how easy this recipe is (you only need three main ingredients and one pan) and the fact you’ll be done in about 15 minutes (making this one very quick recipe to throw together). Hurrah! Something else you might be interested in is that you can freeze this dish for up to three months.

Serves 8

Ingredients

  • 100g chorizo, diced
  • 300g Brussels sprouts, halved or quartered
  • 200g chestnuts, ready cooked, unsweetened
  • 100ml boiled water, use your kettle for the fastest result

Method

  1. Place chorizo in a large, non-stick frying pan and cook over medium-high heat for 2 minutes, stirring occasionally, until lightly browned.
  2. Add Brussels sprouts and chestnuts to pan and fry for 5 minutes, stirring frequently, until sprouts are browned.
  3. Reduce heat, add boiled water and cook for 3-5 minutes more, or until sprouts are well cooked and there’s no more water.
