Who knew grilling banana on the barbecue would make for such a delicious dessert? It’s so simple, and you’ll be reminded of an ice-cream sundae. You could sprinkle some cinnamon over the top of the fruit and serve them as they are, or you could amp them up with a bit of dark chocolate, a dollop of whipped cream and/or a scoop of vanilla ice-cream.

If you don’t have a barbecue, use your oven grill, just make sure to grease everything so that your bananas don’t stick. Leaving the peel on allows the banana to hold up better during the cooking process.

Serves 4.

Ingredients

  • 4 bananas
  • 50g dark chocolate (75 per cent)
  • 30g brown sugar
  • 1 lemon
  • 1 orange

Method

  1. Zest lemon and orange, then juice both. Mix juices with brown sugar.
  2. Preheat the barbecue grill.
  3. Roughly chop chocolate.
  4. Grill bananas in their skin until they are black on the outside. They should be soft on the inside.
  5. Make a lengthways incision in the banana and fill with chocolate. Grill for a further 5 minutes.
  6. Drizzle some of the sugar mixture on top and serve with a scoop of ice-cream.
