Healthy chicken, chorizo and couscous paella

If you’re hunting down a healthy, yet super simple dish to whip up in no time at all, you can’t go past this delicious couscous paella! With the perfect mix of flavours and and an incredibly simple ingredient list, this meal will easily become one of your favourite weeknight dishes!

In just 15 minutes you will have this dish served up and ready to be devoured by you and all of your guests. Yum!

Ingredients

  • 500g chicken thigh fillets, coarsely chopped
  • 1 chorizo sausage, thinly sliced
  • 1 brown onion, finely chopped
  • 2 teaspoons minced garlic
  • 3 teaspoons ground paprika
  • 1 red capsicum, seeded, finely chopped
  • 1 cup (120g) frozen peas
  • 2 medium tomatoes, finely chopped
  • 11/2 cups (375ml) chicken stock
  • 1 1/2 cups (300g) couscous

Method

  1. Heat large frying pan over high heat. Add chicken and chorizo. Cook, stirring occasionally, for 6 mins or until chicken is golden and cooked through.
  2. Add onion, garlic, paprika and capsicum to the pan. Cook, stirring, for 3 mins or until the onion softens. Add peas, tomato and stock. Bring to the boil.
  3. Add couscous to chicken mixture in pan and stir to combine. Remove from heat. Cover pan with foil and set aside for 2 mins or until the liquid is absorbed. Use a fork to separate grains. Divide paella among serving bowls.
