Leftover chicken and corn frittata

Need to use up leftover foods but aren’t sure what to do with them? Look no further than this mouthwatering and incredibly simple frittata recipe that not only helps you to avoid increasing your food waste but will also act as a fantastic take-on-the-go lunch.

While this recipe is wonderfully simple, don’t be afraid of adding in extra ingredients that you need to get rid of like veggies or even extra cheeses such as feta or ricotta. These tasty additions will definitely help, however the recipe is by far tasty enough on its own!

Ingredients

  • 1 tablespoon olive oil
  • 2 cups shredded cooked chicken
  • 3 green onions, finely chopped
  • 2 medium zucchini, grated
  • 2 x 125g cans corn kernels, drained
  • 6 eggs
  • 1/2 cup pure cream
  • 1/3 cup grated parmesan cheese
  • 2 garlic cloves, crushed

Method

  1. Heat oil in 26cm frying pan over medium heat. Add chicken, green onion, zucchini and corn. Cook, stirring for 3 minutes or until zucchini is soft.
  2. Meanwhile, preheat grill on medium. Whisk eggs, cream, cheese and garlic together in a jug. Season with salt and pepper. Pour over chicken mixture.
  3. Cook for 5 to 6 minutes or until almost set. Transfer to grill. Grill for 2 minutes or until golden and set. Serve.
