Cauliflower rice might sounds like another health tip from one of those ridiculous diets but it is actually a great alternative to rice grains. Here’s how you can make it in under five minutes….

For the best results when making cauliflower rice use a food processor:

  1. Remove the leaves from the cauliflower and cut into quarters.
  2. Remove most of the thick core and cut each quarter into several chunks.
  3. Blend half the cauliflower at a time got 30 seconds or until your cauliflower resembles fine rice.

You can also use a grater:

Grate the cauliflower using the coarse side of the grater. This method might leave you with a few larger pieces of “rice”.

      You don’t cook it. To add flavour, fry onion, garlic and some spices. To this add the cut up cauliflower and just coat the flowerettes with the mix . Put this in the food processor and process to grain like consistency. Delicious. If you cook the cauliflower, it becomes too soft.

      I blitz a whole cauliflower in batches, pack single portions in zip lock bags and freeze. When I want to use it as a rice alternative, I defrost and give it 3 minutes on high in the microwave. Does not go soft or mushy. It can also be used successfully in a chicken fried rice (cauliflower ) dish.

      I just give it a little steam in the microwave until it’s softer but still crunchy. Also roasting it in the oven with a little olive oil before processing gives it a lovely nutty flavour. Love it.

      I do enjoy cauliflower this way but not often, way too expensive up here. The “Experts” grumble about us being a nation of obese people but healthy food is too expensive for a lot of us

    Place 1tbs of coconut oil in a large frying pan over medium heat. Add the cauliflower and lightly cook for 4 – 6 minutes, or until softened. Season with salt and pepper and serve.
