Start your week off right with these tasty fritters! They’re packed with delicious and healthy ingredients and best of all they’re easy to make. Fry them up in batches and serve with whatever sides you like! They great with bacon and eggs (nothing wrong with breakfast for dinner!) or with a nice simple salad. You can also had any extras you like into the batter – try parsley, ham, or corn kernels – and change it up a little every time you make them!


  • 300g broccoli
  • 300g cauliflower
  • 125g Cheddar cheese
  • 4 eggs
  • 4 tablespoons breadcrumbs
  • 1/4 teaspoon nutmeg
  • 1 teaspoon garam masala
  • 50g finely chopped onion
  • 2 garlic cloves, diced
  • 1 handful chopped parsley
  • Salt and pepper
  • Vegetable oil (for frying)
  • Yoghurt and lemon, to serve


1. Put some water in a large saucepan and place over a high heat. With the coarse side of a grater, grate broccoli and cauliflower florets. When water is boiling, tip grated broccoli and cauliflower in the saucepan and blanch for 3-4 mins. Drain well, extracting as much water as possible.

2. Place vegetables in a large bowl. Add chopped onion, crushed garlic, beaten eggs, breadcrumbs, grated cheddar, parsley, nutmeg and garam masala. Mix until well blended. Season to taste. If mix does not hold together well, you can add some more breadcrumbs.

3. Heat some oil in a non-stick frying pan. When oil is hot, spoon one generous tablespoon of vegetable mixture. Flatten it with a flipper/ turner spatula. Cook for 3 to 4 mins until you can flip it on the other side. When done transfer to a warm plate in the oven. Cover with foil. Repeat for each fritter. Serve with yoghurt and some lemon.
