It’s going to be another hot one across the country, so if you want something wonderful for afternoon visitors or a nice dessert than you might want to make it in the morning.  This recipe is super quick, super easy, with most saying it’s impossible to get wrong and has endless possibilities.

Ingredients:
4 eggs
¼ cup butter
1 cup white sugar
½ cup plain flour
½ teaspoon baking powder
2 cups milk
1 cup coconut
1 teaspoon vanilla

Method:
1. Place all ingredients in a blender and mix well.
2. Pour into 10” greased pie plate and bake for 1 hour in 180-degree oven.

Top with some berries, cream, of whatever you like.  We have seen it with a bit of chocolate and nuts on top.  Anyway, you have it, it’ll be one of the tastiest things that you make today.

    What a coincidence! I was only thinking about Impossible Pie yesterday and that I should have a look for my 30 yo handwritten recipe and here it is! There’s also a savoury version which works the same way and is just as easy.

      I make the savoury version at least once a fortnight..served with chips and steamed vegies…(I top mine with bacon and cheese)…
