Delicious mini breakfast quiche

Eating the same thing for breakfast every day can get a little monotonous, so mix things up with these tasty little quiches. They’re jam-packed with flavour with bacon, zucchini and cheese making up most of the filling. They’re a great way to use up any extra leftover veggies in the fridge too; try adding mushrooms, capsicum or herbs before baking. Keep them stored in an air-tight container in the fridge and microwave for about 30 seconds before serving. Enjoy!

Ingredients

  • 250g bacon rashers chopped
  • 3 eggs
  • 1 cup milk
  • 1 cup tasty cheese, grated
  • 3/4 cup plain savoury biscuits, crushed
  • 1 zucchini grated small, to taste

Method

1. Beat eggs and milk, then add other ingredients. Pour into greased mini muffin tins.

2. Bake at 180C for about 10 minutes or until golden brown.
