Easy Anzac slice

We all have a tried and true Anzac biscuit recipe that we love to make every year on Anzac Day. Often passed down from our mother or grandmother who made them for their husbands and sons in the trenches during WWII. 

While they’re not the most exciting biscuit, the appeal of them lies in their longevity, as they were made from ingredients that would withstand the long travel to get to the soldiers. Making them each year is a beautiful tradition for most Australian households, and we pass the tradition and the stories down from generation to generation. 

For something a little different to the tradition biscuits, why not give this Anzac slice a try?

Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 2/3 cup brown sugar
  • 2/3 cup desiccated coconut
  • 125 g butter chopped
  • 2 tablespoons golden syrup
  • 2 tbs water
  • 1/2 teaspoon bicarbonate of soda

Method

1. Preheat oven to 160C (140C if fan-forced) and line a standard sized slice tray with baking paper.

2. Mix together oats, flour, sugar and coconut in a large mixing bowl.

3. In a small saucepan over medium heat, melt butter with syrup and 2 tablespoons cold water. Stir in bi-carb soda, and then pour butter mixture into flour mixture and combine.

4. Firmly press the mixture into the slice tray and bake for 25 minutes or until golden.

5. Leave in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely.

6. Once cooled, cut into slices and serve with tea.
