Super easy coconut ice

There’s a good chance you made these once upon a time for your children’s school fetes, and there’s an even better chance you haven’t had them since! There’s no time like the present to bring back this retro classic that everyone loves. 

The best thing is that they’re super simple to make, using only basic ingredients and there’s no baking involved at all! And for such little effort, they look so pretty. 

You’re certain to make the grandkids very happy if you whip up a batch of these for their next visit. With school holidays fast approaching, it may even be worth saving this one and teaching them how to make it if you find yourself on babysitting duty!

Ingredients

  • 2 cups pure icing sugar
  • 1/4 teaspoon cream of tartar
  • 395g can sweetened condensed milk
  • 3 1/2 cups desiccated coconut
  • 5-6 drops pink food colouring

Method

1. Grease a 20cm x 30cm slice tin, and line with baking paper so that the edges overhang.

2. Sift icing sugar and cream of tartar into a large mixing bowl.

3. Add condensed milk and desiccated coconut and stir with a wooden spoon until mixture is well combined.

4. Divide the mixture equally into two bowls.

5. Add the food colouring gradually to one of the bowls, mixing until the desired shade of pink is reached.

6. Place the white mixture in the prepared pan and use a spatula to spread evenly and firmly press down.

7. Carefully repeat with spreading the pink mixture over the top. Refrigerate for 1 hour before cutting into small squares to serve.
