This tasty treat is not only a healthier option for those watching what they eat, but it’s a great on-the-go snack when hunger strikes! With just a few simple, budget-friendly ingredients and a straightforward method, the delicious slice can be rustled up with ease.

While the addition of the icing sugar drizzle does lift the sweet flavour to another level, if you’re looking to cut down in that area, don’t be afraid to leave it out as the slice is definitely tasty enough on its own. Slice it up, pop it in a container and enjoy it whenever you’re craving something a bit sweeter!

Ingredients

  • 3/4 cup (165g) raw sugar
  • 175ml sunflower oil
  • 3 eggs, lightly beaten
  • 1 large carrot (about 140g), grated
  • 100g raisins
  • Grated zest of 1 large orange
  • 175g self-raising flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/3 cup (55g) icing sugar

Method

  1. Preheat oven to 180C. Grease 28cm x 18cm slice pan. Line base and sides with baking paper.
  2. With wooden spoon, mix sugar, oil and egg in large bowl. Stir in carrot, raisins and zest. Sift in flour, soda and spices. Stir until just combined. Spoon into pan.
  3. Bake for 20-25 minutes until skewer inserted in centre comes out clean. Cool slightly in pan. Turn out onto wire rack to cool completely.
  4. Meanwhile, for icing, sift icing sugar into bowl. Stir in 1-2 teaspoons warm water until smooth, soft icing forms. Drizzle over slice. Let set for 10 minutes. Slice and serve.
