Country-style chicken and veggie soup

A delicious option for weeknight dinners!

This delicious soup will come in handy as the nights start to get cooler. It’s packed with healthy ingredients, with plenty of veggies, herbs and tender chicken breast making for one seriously tasty meal. You can mix up the ingredients list to customise it to your taste buds. However, this thick and chunky recipe will definitely be a hit with anyone who tries it.

Serve it up with a warm slice of crusty bread slathered in butter and sprinkle a little parmesan cheese for something special. 

Ingredients

  • 2 tbsp olive oil
  • 120g plain flour
  • 1L chicken stock
  • 1 tsp salt
  • 450g chicken breast, cubed
  • 1 onion diced
  • 200g potatoes, diced
  • 150ml water
  • 200g carrots, diced
  • 200g celery, diced
  • 1 can black-eyed beans
  • 1 can whole tomatoes
  • Fresh parsley

Method

  1. In a large saucepan, heat olive oil over medium high heat. Stir in 1/2 cup flour and chicken stock with a whisk. Whisk until mixture is smooth and cooked through. 
  2. Add in chicken, potatoes, and onion. Cook mixture until chicken is cooked completely. Add water, carrots, celery, beans and tomatoes. Simmer for 20 minutes, covered. Make sure vegetables are tender and mixture is smooth. 
  3. Top with parsley. Serve hot.
