Quick and satisfying creamy garlic prawns

Sometimes you just crave a tasty and filling seafood dish that won’t cost you an arm and a leg to make, and this delicious creamy prawn meal is the best option when these feelings arise. With a few easy ingredients and just 20 minutes of your time, this dish could easily become your next favourite!

The creamy sauce sets this entire dish off and the mixture of fresh prawns with fluffy white rice will have everyone who tries it coming back for seconds. While it definitely works perfectly with a rice base, if you’re looking for something a bit different, try serving it on top pasta, or even with a slice of crusty bread if you’re looking for something lighter. Ingredients

  • 25g butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1 tablespoon flour
  • 1 cup (250ml) chicken style liquid stock
  • 2 tablespoons white wine
  • 1/2 cup (125ml) cream
  • 2 teaspoons dry mustard powder
  • 750g peeled uncooked prawns
  • 1 tablespoon coarsely chopped fresh flat-leaf parsley
  • Salt, to season
  • Steamed rice, to serve

Method

  1. In medium frying pan over medium-high heat, heat butter, oil and garlic until butter has completely melted. Add flour. Cook, stirring for 1 minute or until mixture bubbles.
  2. Slowly add stock, 1/4 cup at a time, stirring constantly to prevent lumps forming. Add wine and cream. Cook, stirring for 3 minutes or until sauce boils and thickens. Add mustard. Season with salt and pepper.
  3. Add prawns. Simmer, stirring for 3 minutes or until prawns are cooked through. Stir in parsley. Serve over steamed rice.
