Classic vanilla custard

This sweet dish makes the best and most adaptable dessert that pairs perfectly with almost everything. You could serve this treat topped over puddings, or cakes, or enjoy on its own with some fresh fruit. This classic recipe is a must-know for any baker as it’s a super easy go-to dish to cook up when you are looking for a tasty but simple dessert for guests or just for yourself.

It’s surprisingly easy to whip up your own homemade custard and it taste so much better than the store-bought product. Guests will fall in love with this deliciously sweet recipe as soon as they try it!

Ingredients

  • 1 cup milk
  • 1 cup thickened cream
  • 1 vanilla bean
  • 4 egg yolks
  • 1 tablespoon cornflour
  • 1/3 cup caster sugar

Method

  1. In a small saucepan, add milk and cream. Use a knife to cut vanilla bean in half lengthways. Scrape out seeds. Add both bean and seeds to saucepan. Place over medium heat. Cook for 5 minutes. Stir constantly until hot but do not bring to boil. Remove from heat.
  2. In a heatproof bowl, whisk egg yolks, cornflour and sugar together to combine. Pour heated milk mixture into heatproof bowl. Whisk constantly to combine.
  3. Pour combined mixture into saucepan. Return to heat. Cook over low heat. Stir constantly for 15-20 minutes to thicken mixture. Do not bring to boil. Remove from heat. Serve warm or cold.
