Light banana and honey muffins

A deliciously good afternoon tea treat that everyone will enjoy!

These deliciously light and fluffy afternoon tea muffins are super ideal for any situation. Whether you have fussy-eaters coming over, hungry grandkids after school, friends watching their weight or just a tasty treat for yourself, these muffins are the answer. Even though one muffin is enough to satisfy your sweet tooth, you’ll be holding yourself back from devouring the entire plate! And while these may taste like they’re a guilty pleasure, they sure aren’t anything to feel bad about.  With a pinch of cinnamon and a bit of honey, these flavoursome banana treats are to die for!

Ingredients

  • Melted butter, for greasing
  • 2 cups (300g) self-raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • Pinch salt
  • 1/2 cup brown sugar
  • 75g butter, melted
  • 1/2 cup (125ml) milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1 cup mashed banana (about 2 bananas)

Method

  1. Preheat oven to 180°C. Lightly grease 12 x 1/3 cup muffin pans with melted butter. In a large bowl, sift flour, baking powder, bicarbonate of soda, cinnamon and salt. Add sugar. Stir well.
  2. In a large jug, add melted butter, milk, honey, vanilla, eggs and mashed banana. Whisk well until combined.
  3. Make a well in the centre of dry ingredients. Add wet ingredients and stir mixture until just combined. Evenly spoon mixture into each muffin hole. Bake for 20 minutes or until inserted skewer comes out clean. Leave to cool in pans for 5 minutes. Turn muffins out onto a wire rack to cool completely. Serve.
