Scrumptious cinnamon scrolls

These freshly baked treats are the best!

There’s nothing better than freshly baked, warm cinnamon scrolls to enjoy on a relaxing afternoon with a cuppa and a book to read. Biting into a homemade scroll will make you wonder why you ever bought them from the store in the first place – or never tried them at all! These baked treats will fill your entire house with the most delicious, comforting smell that will instantly make everyone excited to feast on them.

Topped with a sweet sugar glaze, they’re best served fresh and warm, but you can also store them in an airtight container for up to three days if you want to enjoy them for a bit longer. 

Ingredients

Dough

  • 2 cups plain flour
  • 2 teaspoons caster sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1¼ cups thickened cream
    Filling
  • 1 tablespoon unsalted butter, melted
  • 2 tablespoon brown sugar
  • 2 teaspoons ground cinnamon
    Icing
  • ½ cup icing sugar
  • 1 tablespoon milk

Method

  1. Preheat oven to 180C. Line baking tray with baking paper. In a medium bowl, place flour, sugar, baking powder and salt. Add cream. Stir until a dough forms. Lightly flour a large bench space. Place dough on bench. Knead until completely smooth. Roll dough with a rolling pin to a 20cm x 30cm rectangle. 
  2. In a small bowl add brown sugar and cinnamon. Stir to combine. Brush dough with melted butter. Sprinkle cinnamon mixture evenly over dough. Roll dough from long side into a scroll. Cut into 8 equal slices. Place facing up on baking tray. Flatten slightly. Bake for 20-25 minutes until lightly golden. Place on wire rack to cool slighlty. 
  3. In a small bowl whisk icing sugar and milk. Pour glaze over slightly warm scrolls. Serve warm.
