It can get hard searching for a new and interesting afternoon tea slice that will not only go perfectly with a cup of tea or coffee but that also hasn’t been baked a million times before. This unique and addictive fruity slice is a great option for morning or afternoon tea as it mixes a whole bunch of flavours together to make an ideal treat. The sweet vanilla tastes paired with raspberry and topped off with a bit of almond meal really works wonders to make this slice incredible. Plus, if you’re looking to make this dish for dessert simply pop a scoop of plain vanilla ice cream next to it and voila – a delicious after-dinner treat!
Ingredients
- 1 1/4 cups almond meal
- 70 g butter
- 1/2 cup caster sugar
- 2 eggs
- 1/2 cup plain flour
- 1 tsp baking powder
- 2 cups frozen raspberries
- 1 tsp vanilla essence
- Icing sugar, to serve
Method
- Preheat oven to 160C fan-forced. Line a 20cm x 30cm slice tin with baking paper. Add butter and sugar to bowl. Beat with electric mixers until light and fluffy. Continue beating while you add one egg at a time. Add vanilla essence and almond meal. Mix well. Sift flour and baking powder. Stir until smooth.
- Pour into prepared tin. Smooth out top. Generously spread raspberries over mixture. Press into batter with back of spoon.
- Bake for 30 to 35 minutes or until lightly golden. Cool in tin for 10 minutes. Turn out onto wire rack to cool completely. Dust with icing sugar. Slice. Serve.
