Delicious almond and raspberry slice

A perfectly delicious afternoon tea treat!

It can get hard searching for a new and interesting afternoon tea slice that will not only go perfectly with a cup of tea or coffee but that also hasn’t been baked a million times before. This unique and addictive fruity slice is a great option for morning or afternoon tea as it mixes a whole bunch of flavours together to make an ideal treat. The sweet vanilla tastes paired with raspberry and topped off with a bit of almond meal really works wonders to make this slice incredible. Plus, if you’re looking to make this dish for dessert simply pop a scoop of plain vanilla ice cream next to it and voila – a delicious after-dinner treat!

Ingredients

  • 1 1/4 cups almond meal
  • 70 g butter
  • 1/2 cup caster sugar
  • 2 eggs
  • 1/2 cup plain flour
  • 1 tsp baking powder
  • 2 cups frozen raspberries
  • 1 tsp vanilla essence
  • Icing sugar, to serve

Method

  1. Preheat oven to 160C fan-forced. Line a 20cm x 30cm slice tin with baking paper. Add butter and sugar to bowl. Beat with electric mixers until light and fluffy. Continue beating while you add one egg at a time. Add vanilla essence and almond meal. Mix well. Sift flour and baking powder. Stir until smooth.
  2. Pour into prepared tin. Smooth out top. Generously spread raspberries over mixture. Press into batter with back of spoon.
  3. Bake for 30 to 35 minutes or until lightly golden. Cool in tin for 10 minutes. Turn out onto wire rack to cool completely. Dust with icing sugar. Slice. Serve.
