Super-tasty sweet and sour pork

This delicious pork dish adds in sweet pineapple and the classic sticky sauce to mix together and make an amazing, traditional Cantonese meal. There’s nothing better than a colourful, flavoursome and tasty dinner dish to serve up to your friends and family. Even if this dish takes a bit more patience to cook up than other dinner options, it is worth every minute to taste the end product!

Ingredients

FOR THE PORK

  • 70g cornflour
  • 50g plain flour
  • 1 teaspoon salt
  • 2 eggs
  • 2 tablespoons water
  • 500g pork scotch fillet, cut into 1.5cm pieces
  • Oil, to fr

FOR THE SAUCE

  • 1 tablespoon peanut oil
  • 1 red and green capsicum, chopped
  • 1 carrot, sliced
  • 1 garlic clove, crushed
  • 115g caster sugar
  • 125ml white vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons cornflour
  • 425g can pineapple pieces in natural juices, drained

Method

  1. For the sauce, add oil to a large saucepan over medium heat. Heat oil. Add capsicum, carrot and garlic. Cook for 3 minutes. Add sugar, vinegar, soy sauce and 1 cup of water. Stir to combine. Cook and stir constantly until sugar dissolves. In a bowl, combine cornflour and 2 tablespoons of water. Add mixture to pan. Whisk until it comes to a boil. Leave to simmer for 2 minutes. Add pineapple. Stir. Set aside.
  2. For pork, add cornflour, plain flour, salt, eggs and 2 tablespoons of water to a bowl. Generously coat the pork in the mixture. Carefully deep fry pork in hot oil for 3-4 minutes until golden.
  3. Transfer pork to sauce and stir to coat well. Transfer between serving bowls. Serve.
