An all-time Aussie favourite, these scrumptious homemade biscuits will be a sure hit among family and friends this Anzac Day. As with the traditional recipe, this version is made with rolled oats, flour, sugar, butter and some good ol’ golden syrup. The biscuits have stood the test of time over the years – not least because they’re incredibly affordable to make and delicious. Over the years they’ve also become a symbol of times past and the small acts of kindness from women who sent the biscuits to the men at war so they might remember the taste of home.

The below recipe is from the Australian War Memorial website and is an exact copy of an Anzac biscuit recipe published in Queensland newspaper The Capricorn on August 14, 1926.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup sugar
  • 1 cup plain flour
  • 1/2 cup melted butter
  • 1 tbls golden syrup
  • 2 tbls boiling water
  • 1 tsp bicarbonate soda (add a little more water if mixture is too dry)

Method

1. Combine dry ingredients.

2. Mix golden syprup, boiling water and bicarbonate of soda until they froth. Add melted butter.

3. Combine butter mixture and dry ingredients.

4. Drop teaspoons of mixture onto floured tray, allowing room for spreading. Bake in a slow oven.
