Super easy gluten-free jam drops

Delicious and simple, this classic jam drops recipe is an old favourite everyone loves.

Adding a gluten-free spin, these melt-in-the-mouth jam drops are only made up of five ingredients including butter, sugar, vanilla essence, gluten-free flour and raspberry jam — it’s that simple! 

And the best part is, it’s super quick to whip up and is a handy recipe to have on hand for those gluten-intolerant visitors. A great afternoon treat, store any leftovers in an airtight container in the fridge. Enjoy with a cuppa and dig in! 

 Ingredients 

  • 150g unsalted butter, softened 
  • 1/3 cup caster sugar 
  • 1 tsp vanilla essence 
  • 1 1/2 cups gluten-free plain flour
  • 1 1/2 tbsp raspberry jam 

Method 

  1. Preheat oven to 180°C and grease two baking trays, line with baking paper.
  2. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. 
  3. Add flour, beat to combine. 
  4. Roll one level tablespoon of mixture into ball. Repeat with remaining mixture to make 18 balls.
  5. Place balls, 4cm apart, on trays. Using the palm of your hand, flatten each ball slightly. 
  6. Shape edges to remove any cracks. 
  7. Make an indention in the centre of each biscuit. Fill with 1/4 teaspoon jam. 
  8. Baking for 15 minutes, swapping trays halfway.
