These delicious pan-fried treats are perfect for a filling vegetarian meal that you will love. You can cook these up with a side of your choice to serve as a main meal or even have on their own as appetisers at a party.
It doesn’t matter what time of day you enjoy these treats, you just pair the side dish to the meal you are having. You could make some dipping sauce to serve as a snack, a side of greens for a dinner dish or some salad as lunch. Enjoy!
Ingredients
- 400g sweet potato
- 2 zucchini
- 1/4 cup wholemeal flour
- 1/2 tsp ground ginger
- 1 egg
- 2 tbs sweet chilli sauce
- 2 tbs olive oil
Method
- Peel sweet potato. Grate or shred into a medium bowl. Grate zucchini into bowl. Add flour, ginger, egg and sweet chilli sauce. Mix well to combine.
- Add oil to pan and heat over medium-high heat. Spoon large servings of mixture into pan. Flatten slightly with back of spoon. Fry for two minutes each side. Make sure golden and crispy.
- Remove from pan. Place on plate. Serve warm with side dish of choice.
