Hearty spinach breakfast quiche

This quiche makes for a healthy breakfast option!

While it’s considered the most important meal of the day, breakfast can get a little repetitive if you don’t mix things up from time to time. This quiche combines all of the best breakfast ingredients, including spinach, bacon, eggs and cheese, to make one delicious and healthy breakfast dish.

Because this recipe makes one large quiche you can cut it into pieces and freeze the remainder to be reheated for future meals. You can enjoy this dish at any time during the day so if you’re feeling peckish, give this one a go!

Ingredients

  • Pastry
  • 2 cups (300g) plain flour
  • 150g butter, chilled, cubed
  • Pinch salt
  • 1 egg
  • Filling
  • 2 tsp olive oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped finely
  • 100g rindless bacon, in short, thin strips
  • 100g baby spinach leaves
  • 4 eggs
  • 3/4 cup (185ml) cream
  • 1/2 cup (125ml) milk
  • 1/3 cup (30g) shredded parmesan

Method

  1. For pastry, mix flour, butter and salt in food processor. Process until mixture looks like breadcrumbs. Add egg and 2 tablespoons of cold water. Process together. Turn dough out onto lightly floured bench. Knead dough until smooth. Cover and refrigerate for 10 minutes.
  2. Roll dough out between 2 sheets of lightly floured baking paper. Place in 25cm (base) loose-bottomed flan. Refrigerate for 30 minutes.
  3. Heat oil in frying pan over medium heat. Add onion, tomato and bacon. Cook until soft for about 8 minutes. Remove and dry on paper town. Place spinach in microwave on high for 1 minute until wilted. Cool for 5 minutes. Squeeze out moisture with hands. Chop roughly.
  4. Preheat oven to 190C. Line pastry with baking paper. Place baking weights on top of paper. Bake for 10 minutes. Remove and take off baking paper and weights. Spread spinach, bacon, tomatoes and onion in base. Whisk eggs, cream and milk together in a jug. Pour over filling. Sprinkle parmesan over top. Bake for 30 minutes. Serve.
