Spectacular cakes made by world’s top bakers are a sweet-lover’s dream

The Alice in Wonderland exhibit at the International Cake Show.

Brisbane hosted the spectacular Australian International Cake Show last week. More than 100 statement cakes were flown in from around Australia, including a life size Alice in Wonderland exhibit.

Brisbane pastry chef Greg Cleary told Starts at 60: “The competition is amazing, we’ve had exhibitors come from China, Singapore and Malaysia and the standard is exceptional”. 

The three-day event featured haute couture cake designs, hands-on demonstrations and a six-metre-high white wedding cake.

These standout creations are some of the cakes created by bakers featured over the weekend.

Cleary from Sweetums Designer Cakes was a finalist for the Haute Couture Wedding Cake Designer of the Year category. 

And if you’re feeling inspired, Cleary even shared his best-kept secrets to crafting the perfect sugar flower (as seen below). He says the trick to perfecting a sugar flower is working from a natural flower, adding: “get a real rose and work from that”. He also advises rolling the petals “nice and thin”.

Best known for her ‘show-stopping’ cakes, Sydney-based cake designer Monica Cavallaro, owner of Moreish Cakes, was also nominated as a finalist at the International Cake Show.

If you’re just starting out, research is really important, Cavallaro says.”Stick to tried-and-tested methods and create a group of friends you can share that information with.”

Cake designer Trina Thomson, from Sweet Ruby Artisan Cakes competed in the Ultimate Australian Cake Decorating Competition.

Thomson also designed and constructed the three-metre-long Alice in Wonderland Sugar Art exhibit, alongside cake designers: Zoe Byes, Annette Ibrahim, Louisa Massignani and Helen Wilkinson.
