Super-easy sausage pasta bake

This tasty and super-easy sausage pasta bake is perfect for feeding a crowd and a great addition to dinner or Sunday lunch. Packed with flavour, yet simple enough to whip up in minutes, this recipe combines classic beef sausage meat with baby spinach, fresh tomatoes and basil for a mouth-watering sauce, all sprinkled with cheesy parmesan – it really doesn’t get much better for a comforting bit of home cooking!

Ingredients

  • 375g dried rigatoni pasta
  • 2 tsp olive oil
  • 500g beef sausages
  • 2 x 50g sachets tomato paste
  • 2 x 410g cans tomatoes
  • 100g baby spinach
  • 2/3 cups fresh basil leaves, torn
  • 2 tsp finely chopped fresh rosemary
  • 1 1/2 cups grated parmesan

Method

  1. Preheat oven to 180C. Cook pasta in large saucepan of boiling salted water, following packet directions, until just tender. Drain.
  2. Meanwhile, heat oil in large frying pan over medium-high heat. Squeeze sausage meat from casings into pan.
  3. Cook, breaking up meat with wooden spoon, for 5 to 6 minutes. Drain any excess oil, if necessary. Add tomato paste. Stir to combine. Stir in tomato. Bring to a simmer. Remove from heat.
  4. Add spinach, basil and rosemary. Stir to combine.
  5. Add pasta to sausage mixture. Season with salt and pepper. Toss well to combine.
  6. Spoon mixture into an overproof dish. Sprinkle with parmesan. Bake for 15 to 20 minutes.
