Hearty pork and mushroom stew

This delicious and filling meal is ideal for anyone looking for a quick and easy dish that will feed the whole family. Not only does this meal take less than 20 minutes to whip up but it’s perfect for those working in a budget with only nine easy, everyday ingredients — many of which you likely have in your fridge or pantry already. This is also perfect for those who don’t enjoy cleaning up after enjoying a big dinner as this one pan dish definitely makes life a whole lot easier. Just throw everything in and let it cook! This dish goes perfectly with creamy mashed potato, steamed rice or even pasta. Enjoy!

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, thinly sliced
  • 200g sliced mushrooms
  • 450g pork fillets, fat trimmed, thinly sliced
  • 1 tablespoon smoked paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 1/3 sour cream
  • 1 tablespoon chopped rosemary, plus extra leaves to serve

Method

  1. Heat oil in large frying pan over medium heat. Cook onion. Stir for 4 mins or until golden. Increase heat to high. Add mushrooms, pork, paprika and caraway seeds. Cook and stir mixture for 4-5 mins or until pork starts to brown. Stir in tomato paste. Season to taste.
  2. Add sour cream and chopped rosemary. Cook, stirring, for 1 min or until sauce begins to bubble.
  3. Sprinkle with extra rosemary. Serve with side of your choice.
