Ingredients
- 1 tablespoon olive oil
- 1 brown onion, thinly sliced
- 200g sliced mushrooms
- 450g pork fillets, fat trimmed, thinly sliced
- 1 tablespoon smoked paprika
- 1 teaspoon caraway seeds
- 2 tablespoons tomato paste
- 1/3 sour cream
- 1 tablespoon chopped rosemary, plus extra leaves to serve
Method
- Heat oil in large frying pan over medium heat. Cook onion. Stir for 4 mins or until golden. Increase heat to high. Add mushrooms, pork, paprika and caraway seeds. Cook and stir mixture for 4-5 mins or until pork starts to brown. Stir in tomato paste. Season to taste.
- Add sour cream and chopped rosemary. Cook, stirring, for 1 min or until sauce begins to bubble.
- Sprinkle with extra rosemary. Serve with side of your choice.
