Healthy carrot and ginger soup

This tasty dish will be a hit with the whole family!

This tasty and incredibly easy dish is absolutely stocked to the brim with healthy ingredients including a heavy dose of vitamin C to and ginger to boost your immune system. There’s nothing better than a hearty soup to enjoy on your busy weeknight and with fewer than 10 ingredients, you’d be hard pressed to find an easier and healthier recipe than this. Everyone will go crazy for the delicious flavour but luckily, this recipe is fairly flexible so if you are looking to add a bit of meat, diced and fried bacon and a dash of cream to serve always work well. Enjoy!

Ingredients

  • 2 tablespoons olive oil
  • 1 brown onion, finely chopped
  • 5cm piece ginger, peeled, finely chopped
  • 2 garlic cloves, finely chopped
  • 6 (1kg) carrots, peeled, chopped
  • 4 cups chicken liquid stock
  • Shallots, sliced, to serve

Method

  1. Heat oil in saucepan over medium heat. Add onion, ginger and garlic. Reduce heat to medium-low. Cook, while stirring occasionally, for 8 to 10 minutes or until onion has softened.
  2. Add carrots, stock and 2 cups water to saucepan. Partially cover saucepan and simmer for 35 to 40 minutes or until carrots are very tender. Remove from heat and set aside to cool slightly.
  3. Transfer in batches to food processor or use hand held blender to process soup until smooth. Return soup to saucepan. Stir over low heat until warmed through. Divide among serving bowls. Top with shallots. Serve warm.
