Finding a recipe to suit the whole family can be a difficult task, especially when some guests have a gluten allergy. But this gluten-free banana bread recipe is simple and full of flavour. If you’re the kind of person who prefers a little crunch in their banana bread, you can add a handful of roughly chopped pecans or walnuts to the mixture. This loaf makes a great host’s gift over the holiday period and looks lovely dusted with icing sugar and wrapped simply in baking paper and a red ribbon. Serve warmed with a little butter on top.

Ingredients

  • 2 to 3 very ripe bananas mashed
  • 1/3 cup melted unsalted butter
  • 1 tsp baking soda
  • 1 1/2 cups gluten-free flour
  • 1/4 tsp xanthan gum (can be purchased at supermarkets)
  • Pinch salt
  • 3/4 cup granulated sugar
  • 2 large eggs, beaten
  • 1 tsp pure vanilla extract

Method

  1. Preheat the oven to 180C.
  2. Spray a 10cm x 20cm loaf pan with cooking spray.
  3. In a mixing bowl, mash the ripe bananas until smooth.
  4. Add the baking soda to the mashed bananas.
  5. Stir the melted butter into the mashed bananas.
  6. Stir in the sugar, salt, eggs, and pure vanilla extract.
  7. Mix in the gluten-free flour and xanthan gum (leave out if your flour already has it in it).
  8. Pour the batter into a greased loaf pan. Bake on the centre rack for 50 minutes.
