Finding a recipe to suit the whole family can be a difficult task, especially when some guests have a gluten allergy. But this gluten-free banana bread recipe is simple and full of flavour. If you’re the kind of person who prefers a little crunch in their banana bread, you can add a handful of roughly chopped pecans or walnuts to the mixture. This loaf makes a great host’s gift over the holiday period and looks lovely dusted with icing sugar and wrapped simply in baking paper and a red ribbon. Serve warmed with a little butter on top.
Ingredients
- 2 to 3 very ripe bananas mashed
- 1/3 cup melted unsalted butter
- 1 tsp baking soda
- 1 1/2 cups gluten-free flour
- 1/4 tsp xanthan gum (can be purchased at supermarkets)
- Pinch salt
- 3/4 cup granulated sugar
- 2 large eggs, beaten
- 1 tsp pure vanilla extract
Method
- Preheat the oven to 180C.
- Spray a 10cm x 20cm loaf pan with cooking spray.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the baking soda to the mashed bananas.
- Stir the melted butter into the mashed bananas.
- Stir in the sugar, salt, eggs, and pure vanilla extract.
- Mix in the gluten-free flour and xanthan gum (leave out if your flour already has it in it).
- Pour the batter into a greased loaf pan. Bake on the centre rack for 50 minutes.
