Scrumptious cranberry and orange muffins

These light and fluffy muffins are packed with cranberries and zesty orange flavour making them the perfect light afternoon treat.

You can make the delicious cakes with either fresh or frozen cranberries and to really take it to the next level, try drizzling a little bit of warm honey over the top. They’re great served fresh or freeze them for holiday guests. Delicious!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 2 tsp baking powder
  • 2 large eggs
  • 2/3 cup orange juice
  • 1/3 cup vegetable oil
  • 1 cup cranberries, coarsely chopped
  • 1 cup chopped pecans

Method

  1. In a large bowl, combine flour, brown sugar and baking powder. 
  2. In another bowl, beat eggs. 
  3. Add orange juice and oil, stir into the dry ingredients. 
  4. Fold in cranberries and pecans. 
  5. Spoon into 12 greased or paper-lined muffin cups. 
  6. Bake at 190C for 20 minutes. Remove from pan to cool on wire rack.
