More-ish cinnamon and orange biscuits

These sweet treats will quickly become one of your favourites thanks to the subtle yet refreshing mix of orange and cinnamon that goes so perfectly alongside a fresh cup of tea or coffee. It’s good these biscuits are fairly light on your stomach as you’ll most likely find yourself addicted to snacking on them! You can make them the size of normal biscuits or even a bit smaller so they’re bite-sized for a light and easy snack. These bright biscuits will have everyone going back for seconds!

Ingredients

  • 1 cup sugar
  • 1 1/3 cup shortening
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 orange, zest of
  • 1⁄4 cup orange juice (from orange)
  • 2 1⁄2 cups plain flour
  • 1⁄2 teaspoon bicarbonate of soda
  • 1⁄2 teaspoon salt
  • 3 tablespoons cinnamon

Method

  1. Preheat oven to 180C. Line baking trays with baking paper.
  2. In bowl beat together 1 cup sugar, shortening, egg, vanilla and orange zest. Add orange juice, flour, bicarbonate of soda and salt. Stir until well combined. Shape mixture into balls.
  3. In separate bowl, combine 1/3 cup sugar with cinnamon. Roll balls of mixture in cinnamon sugar. Press onto prepared baking tray with a glass dipped in cinnamon sugar. Bake 10-15 minutes until lightly golden. Serve.
