South Australian bakery takes the cake with Australia’s best vanilla slice

Although many may claim to have the best vanilla slice in town, a bakery in South Australia has proven that their version of Australia’s favourite dessert is a slice above the rest.

Banana Boogie Bakery has elevated the classic vanilla slice to new heights, earning the title of Australia’s Best Vanilla Slice at this year’s Great Australian Vanilla Slice Triumph competition.

After evaluating taste, texture, and presentation, the judges awarded Banana Boogie’s vanilla slice the title of the country’s best.

The team at Banana Boogie Bakery could not have been happier with claiming the title, taking to social media to celebrate their win.

“We f*&$ing did it,” they wrote.

“Best Vanilla Slice In Australia 2024.”

Not only can Banana Boogie Bakery now boast the title of the best vanilla slice, but it also claims the honour of having the best sausage roll in the country. This accolade was earned earlier this year at the Baking Association of Australia (BAA) South Australian Baking Show, where 49 bakeries and 247 delectable products competed for the coveted title.

Ingredients

  • 2 sheets of puff pastry
  • 300ml thickened cream
  • 2 x 100g packets of instant vanilla pudding mix
  • 500ml milk
  • 1 1/2 cups icing sugar
  • 1 tbsp soft butter
  • 2 tbsp boiling water

Method

  • Preheat oven to 180°C.
  • Prepare two pastry trays by greasing them with butter.
  • Place the pastry on the trays and prick them with a fork all over.
  • Bake the pastry for 20 minutes until golden, then remove from the oven and set aside.
  • Next whip up the cream, stopping when it forms peaks and place it in the fridge.
  • Mix together the vanilla pudding mix and milk in another bowl until combined.
  • Take the whipped cream out of the fridge an fold the mixture into the pudding mixture.
  • Spread the mixture over the top side of one of the pastry sheets and put the other sheet on top.
  • Sift some icing sugar into a bowl and add in the butter and water.
  • Mix the ingredients to form an icing and then spread over the top of the slice.
