Succulent slow-cooked apricot chicken

Break out your slow cooker! You’ll be feasting on this delicious mouth-watering combination of succulent chicken and plump apricots. This is a fantastic meal when you have friends or family around. The aroma of this dish is amazing! Try serving it with some fluffy couscous.

This is a great slow cooker recipe. It’s perfect ‘as is’ or can be made thicker and/or creamier with a couple of variations.

If you want a thicker sauce, consider combining 1 tablespoon of corn flour with 1 tablespoon of water and mix until you have a smooth paste, then add to the chicken mixture and stir well. For a creamy recipe, add 1/3 cup of light cooking cream to the slow cooker and heat for a further 20 minutes.

Ingredients

  • 5 chicken breast fillets, halved and diced
  • 4 garlic cloves, peeled and  minced
  • 3/4 cup dry white wine
  • 1 cup chicken stock
  • 1/3 cup white wine vinegar
  • 2 tbsp olive oil
  • 120g dried apricots, chopped
  • 1/2 cup green olives, pitted and sliced
  • 1/4 cup brown sugar
  • 3 tbsp dried oregano
  • 2 tsp ground cumin

Method

  1. Place cubed chicken in a slow cooker.
  2. Combine garlic, wine, stock, vinegar, oil, apricots, olives, brown sugar, oregano and cumin in a bowl.
  3. Mix thoroughly and pour mixture over chicken.
  4. Cook on High for 3-4 hours.
