This is an easy all-in-one recipe that you can whip up during the week. We recommend serving it with fluffy rice or creamy mashed potato.

Ingredients
- 4 chicken thigh fillets
- 405ml apricot juice
- 1 brown onion, diced
- 1 tbsp cornflour
- 1 tsp garlic, minced
- 2 tsp ginger, minced
- 2 tsp wholegrain mustard
- 1 tbsp soy sauce
- 2 tbsp sweet chilli sauce
- 1 tsp chicken stock powder
- 1 pinch of ground black pepper
Method
- Preheat oven to 200C. Cut each fillet into 4 pieces, and lay in a baking dish.
- Mix cornflour with a little apricot nectar until smooth, then add other ingredients and mix well.
- Pour over chicken and bake, uncovered, at 200C for 30-40 minutes, or until chicken is cooked and brown on top.
