Spicy apricot chicken

You can get 'fancy' with a sprinkling of almond flakes, but even without them this apricot chicken dish is so tasty! Source: Getty Images

This is an easy all-in-one recipe that you can whip up during the week. I’d recommend serving with fluffy rice or creamy mashed potato.

Serves 4.


  • 4 chicken thigh fillets
  • 405ml apricot juice
  • 1 brown onion, diced
  • 1 tbsp cornflour
  • 1 tsp garlic, minced
  • 2 tsp ginger, minced
  • 2 tsp wholegrain mustard
  • 1 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • 1 tsp chicken stock powder
  • 1 pinch ground black pepper


  1. Preheat oven to 200C. Cut each fillet into 4 pieces, and lay in a baking dish.
  2. Mix cornflour with a little apricot nectar until smooth, then add other ingredients and mix well.
  3. Pour over chicken and bake, uncovered, at 200C for 30-40 minutes, or until chicken is cooked and brown on top.
