Slow cooker lemon and garlic chicken

It’s time to put the slow cooker to work for this mouthwateringly good chicken dinner! Not only is this recipe incredibly simple, but it’s also a guaranteed crowd pleaser that’s absolutely perfect for serving up to family and friends!

Even the fussiest of eaters will enjoy this basic yet delicious dish that works for both lunch and dinner. Plus, if you don’t finish it all off in one go, simply package it up and throw it in the fridge to enjoy over the next few days!

Ingredients

  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 kg skinless, boneless chicken breast fillets
  • 30g butter
  • 3 tablespoons water
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, crushed
  • 1 teaspoon chicken stock powder
  • 1 teaspoon chopped fresh parsley

Method

  1. In bowl, mix oregano, salt and pepper together. Rub mixture into the chicken to coat entirely.
  2. Melt butter in frying pan over medium heat. Brown chicken for 3 to 5 minutes on each side. Place chicken in slow cooker.
  3. In same frying pan, mix water, lemon juice, garlic and stock powder together. Bring mixture to the boil. Pour over chicken in the slow cooker.
  4. Cover and cook on High for 3 hours, or Low for 6 hours. Add parsley to slow cooker 15 to 30 minutes before the end of the cook time. Serve.
