Buddha bowls are ‘all the rage’ at the moment. Or maybe they’ve always been ‘the rage’ and I’m just catching up. Either way, this Dragon bowl is a healthy vegan and gluten-free buddha bowl recipe that’s packed with fresh vegetables, brown rice, tofu and a ridiculously tasty dressing.

These things are ideal for lunch. You can make them in advance and just grab and go.

If you’re still scratching your head and wondering ‘What the…?’, it’s basically a bowl of grains, raw vege, roasted vege, various greens and other edibles that are good for you. You’ll feel more satisfied than you could possible imagine. What makes it a ‘dragon bowl’? That’s the dressing and it takes this meal to the next level. Here we go…

Serves 2.

Ingredients

  • 1/2 block firm tofu, cut into cubes
  • 1 tbsp avocado oil, or any other high heating oil
  • 1 cup brown rice, cooked according to package directions
  • 1/2 cup cabbage, shredded
  • 1 beetroot, shredded
  • 1 large carrot, sliced
  • alfalfa sprouts (or any other sprouts)
  • 1 avocado, sliced

FOR THE DRESSING

  • 1/4 cup nutritional yeast
  • 3 tbsp avocado or olive oil
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 2 tbsp tahini
  • 3 tbsp water
  • 2 tbsp tamari
  • 1 garlic clove, minced

Method

  1. Cook the tofu by heating a pan with olive oil. Place cubed tofu in the pan, on medium heat. Let each side cook for about 4-5 minutes, or until golden brown on each side. then remove from heat.
  2. Make the dressing by blending all dressing ingredients together in a small blender, or whisk them together in a bowl.
  3. Assemble your bowl. Spoon some brown rice the bottom of your bowl. Place your cabbage, beets, carrots, and sprouts, avocado, and tofu in little piles on top. Drizzle dragon sauce on top and enjoy!
