This deliciously comforting dinner dish is absolutely exploding with flavour! With just a handful of cheap and easy ingredients and a method that even the most novice chef can master, this dish is perfect for those evenings where you just don’t feel like hanging around the kitchen all night.
While the curry powder, coriander and lemon all add extra delicious flavours to the overall product, if you’re looking to spice up the meal even more – try adding in chilli flakes, turmeric and garam masala to create something even tastier! Enjoy!
Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 tbsp medium curry powder
- thumb-sized piece of ginger, peeled and finely grated
- 3 garlic cloves, crushed
- 2 x 400g cans chopped tomatoes
- 400g can chickpeas
- 4 cod fillets (about 125-150g each)
- zest 1 lemon, then cut into wedges
- handful coriander, roughly chopped
Method
- Heat oil in large, lidded frying pan. Cook onion over high heat for a few mins.
- Stir in curry powder, ginger and garlic. Cook for another 1-2 mins or until fragrant. Stir in tomatoes, chickpeas and some seasoning.
- Cook for 8-10 mins until thickened slightly. Top with cod. Cover and cook for another 5-10 mins or until fish is cooked through.
- Scatter over lemon zest and coriander. Serve with lemon wedges to squeeze over.
