Spinach, Orange, Feta and Tuna Salad

Serves: 1
Carbs per serve: 10g

Ingredients

  • 2 cups baby spinach leaves
  • ½ orange, cut into segments
  • 30g feta, crumbled
  • 70g canned flaked tuna
  • 1 tablespoon chopped toasted walnuts or almonds

Dressing

  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon chopped fresh mint and parsley
  • Salt and pepper, to taste

Method

  1. Place the baby spinach in a serving bowl. Top with the orange segments, crumbled feta and flaked tuna.
  2. To make the dressing, whisk together the olive oil, apple cider vinegar, mint, parsley, salt and pepper in a small bowl.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Sprinkle with the toasted walnuts or almonds and serve.
