This no-bake option is by far one of the tastiest and easiest dessert dishes you could ever hope for. With just a handful of ingredients and one night of chilling in the fridge, you can whip up this delicious dish that is guaranteed to win over even the toughest of critics. Enjoy!


  • 250g digestive biscuits
  • 100g butter, melted
  • 1 vanilla pod
  • 600g full fat cream cheese
  • 100g icing sugar
  • 284ml heavy cream
  • 400g punnet of strawberries, halved
  • 25g icing sugar


  1. For base, butter and line 23cm loose-bottomed tin with baking paper. Put digestive biscuits in plastic food bag. Crush to crumbs using rolling pin. Transfer crumbs to bowl. Pour over melted butter. Mix thoroughly until crumbs are completely coated. Tip them into prepared tin. Press firmly down into base to create even layer. Chill in fridge for 1 hr to set firmly.
  2. Slice vanilla pod in half lengthways, leaving tip intact, so that two halves are still joined. Holding onto tip of the pod, scrape out seeds using back of kitchen knife.
  3. Place cream cheese, icing sugar and vanilla seeds in bowl, beat with electric mixer until smooth. Tip in double cream and continue beating until mixture is completely combined. Spoon cream mixture onto biscuit base, starting from edges and working inwards, making sure that there are no air bubbles. Smooth top of cheesecake down with spatula. Leave to set in fridge overnight.
  4. Bring cheesecake to room temperature about 30 mins before serving. Remove from tin. Purée half the strawberries in food processor with icing sugar and 1 tsp water. Sieve. Pile remaining strawberries onto cake. Pour purée over top. Serve.
