Savoury and sweet! Mum’s delicious two-ingredient schnitzel is a hit

Everyone has their secret ingredient to make the perfect meal, whether it be a certain spice or way of cooking, and now one mum has sent the internet into a spin with her creative take on the traditional chicken schnitzel.

It’s a dish that’s enjoyed by many across the world, with the common coating containing a mix of eggs, flour and bread crumbs. But when a mother named Barbara realised she didn’t have all the ingredients in her kitchen cupboard, she decided to take a risk with an item already in her pantry.

Instead of rushing to the shops to purchase the missing breadcrumbs and flour, she used Aldi’s White Mill pancake mix. It might sound a little strange, but according to Barbara it was a big hit with her family, and now many other parents who have been looking for easy dinner options.

Taking to social media recently to share her creative recipe, the mum said she was quite surprised by the taste which she described as the “perfect blend of savoury and sweet” and a little like the common American dish of fried chicken and waffles.

“I planned to make chicken schnitzel for dinner tonight,” she wrote on the Aldi Mum’s Facebook group. “I forgot to buy breadcrumbs and flour today. I did have pancake mix though! All ingredients from Aldi and cooked in an Aldi pan.

“I sliced the chicken breast thinly. I brined the chicken in milk and salt for about four hours. Dipped the chicken in egg and then the pancake mix and cooked it in a non-stick pan that I bought from Aldi. The kids ate most and used the leftovers for their lunches tomorrow. I guess it was great if they ate it!”

Members of the Facebook group were blown away with the idea and said they would definitely be trying the delicious meal. While others shared their own recipes for tasty treats.

“It sounds ingenious and I for one will definitely try it,” one person commented. “I mean if the Americans can do chicken and waffles, why not pancake schnitzel?”

“Yum I love me some chicken and I love me some pancakes, bring it on!” another wrote. “I’ve done something like that before. We make little homemade chicken popcorn but we call them chicken poppers. I got chicken bread crumbs but forgot eggs. So then I just used melted butter. Wasn’t the same but you gotta do what you gotta do. Well done momma [sic] on feeding your family and being inventive.”

A third said: “Looks amazing. I had a similar dilemma … we were going to have crumbed chicken drumsticks, but I didn’t have any ingredients. So I just dipped the chicken in egg and crushed some nacho chips up and voila! Kids gave it a 10/10.”
