Sweet, zesty and delicious! The lemon butter recipe you need to try

Lemon butter is sweet, zesty and downright delicious – and it’s gaining in popularity once again. While the tasty spread can still be purchased at supermarkets, it’s probably been a while since you’ve eaten a homemade version of it – which is unfortunate, because it really is amazing.

Over the years there’s been lots of variations of the spread since it originally appeared in recipe books back in the 1700s, but generally it contains lemon, eggs, butter and sugar. And it’s been known by different names as well, including lemon curd and lemon cheese.

Now, with everyone becoming master chefs during self-isolation, one home cook has reintroduced everyone to lemon butter with a super easy recipe that can be made in the slow cooker. All you’ll need is freshly squeezed lemon juice, grated lemon rind,  sugar, butter and eggs.

“Throw it all together, mix on high until butter dissolves, turn to low for about an hour mixing regularly … done!” she wrote on the post shared to Facebook group Budget Friendly Recipes Australia. “Easy, cheap and delish [sic] … lasts a couple of weeks too!”

Fellow home cooks have gone wild for the recipe, with many eager to try it out themselves. While for others it has brought back memories from their childhood and the days when their mum would cook up batch to be enjoyed on a piece of toast or with fresh bread and butter.

“Gonna [sic] try this as all the recipes I’ve tried never compare to the lemon butter I used to eat as a child from the supermarket,” one follower wrote. “Thanks for sharing.”

“Yum! My mum used to make this, I might have to give it a go,” one person commented on Facebook. While another user added: “Thank you! Might give this a go with my abundance of limes!”

Slow cooker recipes have been a big hit of late, with home cooks from right around the country sharing their recipes on social media. One of the most popular and different recipes to make an appearance was a bread and butter pudding with a twist.

Instead of using the traditional ingredients of bread and butter, one home cook changed things up, instead using croissants and Nutella. The recipe was shared to Facebook group Slow Cooker Recipe and Tips recently and you’ll be pleased to know it seems fairly easy to make – especially considering it’s made in a slow cooker.

“Desserts in,” the post read. “Bread and butter pudding with Nutella and croissants. Six mini croissants sliced, Nutella ‘buttered’ on the cut sides, two cups of milk, four eggs, two tablespoons of sugar, a dash of vanilla extract. I’m cooking on low for two hours as my slow cooker runs hot, with a tea towel under the lid.”
