Pesto, mozzarella, and tomato stuffed chicken breasts

You have to love a dish that tastes amazing and is healthy too; after all, they don’t come along as often as many of us would like. We all know that chicken breast is the ultimate lean meat, and as such is an excellent form of protein. It can definitely get boring quickly though, so if you’re eating a lot of chicken, this recipe will be a welcome change. 

Stuffed with tasty pesto, tomato, and mozzarella, they’re bursting with flavour and the cooking process ensures the meat will remain moist and tender. They make a meal on their own, or you might want to serve them with fresh, steamed veggies. 

Ingredients

  • 4 chicken breasts
  • 8 tablespoons pesto
  • 8 slices tomato
  • 1 cup grated mozzarella cheese
  • 2 tablespoons olive oil
  • salt and pepper

Method

1. Preheat oven to 200C.

2. Slice the chicken breasts open horizontally, careful not to cut all the way through, and open.

3. Spread the open surface of the chicken with pesto, followed by tomato slices and mozzarella.

4. Close the chicken like a sandwich and sprinkle with salt and pepper and drizzle olive oil.

5. Heat olive oil in a frypan over a high heat and sear chicken on each side for 3-4 minutes. Transfer to oven and bake for a further 10 minutes to finish cooking.

6. Serve with steamed vegetables.
