Overnight cinnamon apple baked french toast

What’s better than a hot breakfast? The answer is, one that’s mostly prepared the night before! This overnight cinnamon apple baked french toast is like a breakfast casserole, and most of the preparation work is done the night before, meaning you just need to bake it and add the topping in the morning. 

You could put it in the oven before your shower, and by the time you’re ready a nice, hot breaky will be waiting. If it’s a bit too sweet for you first thing in the morning, it would also make a great dessert!

Ingredients

  • 1 loaf sourdough or french bread, broken up
  • 3 cups chopped green apples (approximately 3 large apples)
  • 8 eggs
  • 500ml milk 
  • 120ml thickened cream
  • 1/2 cup sugar
  • 1/4 cup brown sugar, loosely packed
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon

Topping:

  • 3/4 cup plain flour
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, chopped

Method

1. Grease a 23×33 inch baking dish.

2. Combine the bread chunks and chopped apples and pour evenly into the greased dish.

3. Whisk the remaining ingredients together in a large bowl (minus the topping), and pour over bread and apple mixture. Cover dish and leave overnight in fridge.

4. In the morning, preheat oven to 175C and bake for 35-40 minutes.

5. While baking, in a medium mixing bowl mix together flour, brown sugar, and cinnamon for the topping. Add butter and rub into the dry ingredients to make a crumbly mixture.

6. Remove the baking dish from the oven and sprinkle topping evenly over the top. Bake for a further 5 minutes. Enjoy warm!
