Best ever meatloaf recipe

Meatloaf gets a bit of a bad rap when it’s compared to say, roast beef. But it’s one of those comforting, family favourite dishes you’ll always be glad you made, and it will be guaranteed to bring everyone to the table.

This best-ever meatloaf recipe is super easy to make, gluten-free, and healthier than recipes that call for sausage mince. The best thing about meatloaf is that it’s very cheap to make, and it’s bursting with flavour. Make it and serve with roasted veggies to replace your traditional roast, or serve it with mashed potatoes and steamed veggies. Make sure you have plenty of gravy too!

INGREDIENTS

  • 500g lean beef mince
  • 1 onion, finely chopped
  • 2 eggs
  • ½ teaspoon ground pepper
  • ¾ cup quick oats
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon onion salt
  • ½ cup tomato sauce

METHOD

1. Preheat oven to 180C.

2. Spray a 22cm x 12cm loaf tin with non-stick cooking spray.

3. Mix together the beef mince, onion, eggs, pepper, oats, Worcestershire sauce, garlic salt, onion salt and tomato sauce in a large mixing bowl, with your hands, taking care not to over-mix.

4. Bake for 75-90 minutes or until meatloaf is cooked through.

5. Serve with steamed or roasted vegetables and hot gravy.
