
Some recipes have a way of sneaking into your life and never quite leaving. I first met this famous Kiwi Dip years ago through my New Zealand-born neighbours on the Gold Coast, where it was a regular at barbecues and casual get-togethers. But it wasn’t until a Christmas holiday in Auckland that I realised just how deeply loved this simple dip really is.
From family tables to café menus, the humble Kiwi Dip seemed to appear everywhere over the festive break – proof that sometimes the most comforting food isn’t fancy at all. With just a handful of ingredients and a whole lot of nostalgia, this New Zealand classic is one recipe worth bringing home.
Classic Kiwi Dip
Ingredients
Reduced cream (chilled)
1 packet onion soup mix
Juice of ½ a lemon (or to taste) and a drop of malt vinegar
To Serve
Potato chips (plain or ridged work best)
Raw vegetables such as carrots, celery, or cucumber
Method
Remove the reduced cream from the fridge and let it soften slightly.
In a bowl, mix the reduced cream and onion soup mix until well combined.
Add lemon juice gradually, stirring and tasting as you go.
Chill for at least 30 minutes before serving to let the flavours develop.
Tip: Many Kiwi families swear it tastes even better the next day.
