The easiest 5-ingredient chicken curry for a comforting Friday night

That’s why a simple chicken curry is the perfect way to ease into the weekend. With only five everyday ingredients, this recipe delivers rich, satisfying flavour while keeping things wonderfully easy. Whether you’re cooking for one, two, or feeding the whole family, this dish proves that delicious doesn’t need to be difficult5-

Ingredient Easy Chicken Curry
Ingredients (serves 3–4)

500g chicken thighs, diced

1 jar (about 300g) of your favourite curry paste
e.g., korma, tikka masala, butter chicken, rogan josh – any will work
1 can (400ml) coconut milk
1 onion, sliced
1 tbsp cooking oil
(Salt, pepper, rice or herbs are optional extras and not counted as ingredients.)

Method
Sauté the onion
Heat the oil in a large pan over medium heat. Add the sliced onion and cook until soft and lightly golden, about 5 minutes.
Add the chicken
Stir in the diced chicken thighs and cook until lightly browned on all sides.
Stir in the curry paste
Add the curry paste to the pan, mixing it through the chicken and onion until everything is well coated and fragrant.
Pour in coconut milk
Add the coconut milk, stir to combine, and bring to a gentle simmer.
Simmer until tender
Reduce the heat and cook for 12-15 minutes, or until the chicken is cooked through and the sauce has thickened.
Serve and enjoy
Spoon over steamed rice or warm naan. Optional: sprinkle with coriander for freshness.

Tip for Extra Goodness (Optional)
If you want to add veggies without complicating things, toss in a handful of frozen peas or baby spinach in the last 5 minutes.
