Millionaire’s Slice Recipe
Ingredients

Shortbread Base
1 cup (150g) plain flour
½ cup (110g) caster sugar
½ cup (115g) unsalted butter, melted
Pinch of salt
Caramel Layer
1 can (395g) sweetened condensed milk
½ cup (125g) unsalted butter
½ cup (110g) brown sugar
2 tbsp golden syrup
1 tsp vanilla extract
Chocolate Topping
200g milk or dark chocolate, chopped
1 tbsp vegetable oil or butter (to prevent cracking)

Method

1. Make the Shortbread Base
Preheat oven to 180°C (160°C fan-forced).
Line a square 20cm baking tin with baking paper.
Mix flour, sugar, melted butter and salt until combined.
Press firmly into the base of the tin.
Bake for 15–18 min, until lightly golden.
Set aside to cool.
2. Cook the Caramel Layer
In a saucepan, combine condensed milk, butter, sugar and golden syrup.
Stir continuously over medium heat for 8–10 minutes until thick, smooth and lightly golden.
Add vanilla extract.
Pour over the cooled shortbread base and smooth the top.
Bake for 10 minutes to set.
Cool completely before adding the chocolate layer.
3. Add the Chocolate Topping
Melt chocolate and oil together in a microwave or double boiler.
Pour over the cooled caramel and spread evenly.
Chill for at least 2 hours.
Remove from the tin and cut with a warm knife for clean slices.
