Social media recipe developer Victoria Minell, better known as @recipesbyvictoria, is back with another favourite from her debut cookbook, High-Protein Recipes by Victoria. This cheeseburger parcel has all the flavours of a classic burger: a juicy beef patty, melted mozzarella, pickles, lettuce, tomato and burger sauce, wrapped up and toasted until golden and crunchy. It comes in under 500 calories with more than 40 grams of protein, and it’s easy to prep in the morning and toast at lunchtime in a frying pan, sandwich press or air fryer.

Cheeseburger parcel

This high-protein cheeseburger parcel is my go-to when I want something quick, cheesy and ridiculously satisfying. You can prep it in the morning, wrap it up, then just throw it in the sandwich press or air fryer at lunchtime for that golden, crunchy finish.

Under 500 calories
Over 40 g protein

Serves: 1
Prep meal: 5 mins
Cook meal: 10 mins

120 g extra-lean beef mince
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1 teaspoon tomato sauce
olive oil spray
30 g shredded light mozzarella
1 tablespoon burger sauce
1 low-carb high-protein wrap (GF oponal)
2 leuce leaves (iceberg or cos)
3 thin slices tomato
1 tablespoon finely diced brown onion
3 cucumber pickles, sliced

Method

In a bowl, mix the beef mince, garlic powder, pepper and tomato sauce. Shape into a ball and flatten slightly.

Spray a frying pan over high heat with oil. When the pan is hot, add the patty and cook until browned, flipping halfway. Add the cheese on top and let it melt.

Spread the sauce on your wrap, then layer the lettuce and tomato slices on one side. Place the burger patty on the other, topping with the onion and pickles.

Fold the sides of the wrap inwards and close. Toast the wrap in a frying pan with a spray of olive oil over high heat for 30 seconds on each side until golden
and crisp.

LEFTOVERS

Store any left-over wrap (uncut) in an airtight container in the fridge for up to 24 hours. Toast again in a hot pan, air fryer or sandwich press for 2–3 minutes to bring back the crunch.
