- 1 cup milk
- 1 cup thickened cream
- 1 vanilla bean
- 4 egg yolks
- 1 tablespoon cornflour
- 1/3 cup caster sugar
- In a small saucepan, add milk and cream. Use a knife to cut vanilla bean in half lengthways. Scrape out seeds. Add both bean and seeds to saucepan. Place over medium heat. Cook for 5 minutes. Stir constantly until hot but do not bring to boil. Remove from heat.
- In a heatproof bowl, whisk egg yolks, cornflour and sugar together to combine. Pour heated milk mixture into heatproof bowl. Whisk constantly to combine.
- Pour combined mixture into saucepan. Return to heat. Cook over low heat. Stir constantly for 15-20 minutes to thicken mixture. Do not bring to boil. Remove from heat. Serve warm or cold.
