These buttery bites are one of the most popular afternoon tea treats and this zesty flavour really makes them stand out. They’re best served fresh from the oven for that deliciously warm, melt-in-your mouth taste.

The mix of lemon and pistachio works perfectly, and these treats are super light which also makes them incredibly addictive. Before you know it you’ll have finished a whole batch by yourself! They have long been a favourite choice to go alongside a hot cuppa in the afternoon, so don’t miss out on trying your own delicious version.

Ingredients

  • 190g unsalted butter, melted
  • 60g plain flour
  • 200g icing sugar, plus extra to serve
  • 60g ground almonds
  • 60g unsalted pistachios, finely ground
  • 5 egg whites
  • grated zest of 2 lemons

Method

  1. Preheat oven to 180C. Grease a 12-hole friand/muffin pan with a little bit of the melted butter. Lightly dust with flour and shake out excess.
  2. Sift flour and sugar into a large bowl. Stir in ground almonds and ground pistachios.
  3. Place egg whites in a small bowl. Lightly whisk with fork until frothed. Add to dry ingredients along with melted butter and zest, stirring until completely combined.
  4. Fill each hole in the pan two-thirds full. Bake for 25-35 minutes until golden and cooked through. Remove from oven, leave to cool in pan for 5 minutes. Turn out onto wire rack to cool completely. Dust with icing sugar. Serve.
