Delicious blueberry and coconut pudding

This delicious dessert is a must-try for any fruit lover. With just eight easy ingredients, you can enjoy this indulgent dish without loosening the purse strings too much. It’s a quick and easy treat that can be whipped up in under an hour and will leave absolutely everyone who tries it wanting to get their hands on the recipe.

Because of how easy it is – and how fantastic the end product tastes – this dish is the best for serving up to hungry guests when you’re hosting events. Serve it up with a scoop of plain vanilla ice cream or a dollop of crème fraîche for something a bit more adventurous. Enjoy!


  • 50g caster sugar
  • 50g soft butter
  • 1 large egg
  • 50g self-raising flour
  • 50g desiccated coconut, plus 2 tsp
  • 50g crème fraîche, plus extra to serve
  • zest and juice 1 lemon
  • 180g punnet of blueberries


  1. Heat oven to 180C. Beat sugar and butter together until pale and creamy. Beat in egg.
  2. Next, stir in flour, coconut, crème fraîche and lemon zest.
  3. Place majority of the blueberries in an 18cm square baking dish. Squeeze over juice from half the lemon. Dollop on cake mixture. Scatter over remaining blueberries and 2 teaspoons of coconut.
  4. Bake for 35-40 mins until golden and sponge is cooked. Serve with extra dollop of crème fraîche.
