Tasty layered enchilada pie

Recently, we tried an Enchilada Pie recipe that was absolutely delicious and received rave reviews from everyone. It was so good that we didn’t leave a single bite on our plates. Best of all, it was affordable and simple to prepare.

  • 500g of beef mince
  • 8 tortillas
  • Grated cheese
  • Taco seasoning powder (1-2 sachets)
  • 1 onion
  • 1 green capsicum
  • 2 large tomatoes
  • Iceberg lettuce
  • Sour cream
  • Avocado
  • Taco sauce

Method

Chop the onion and sauté it in a pan.

Add the beef mince, cook until browned, then stir in the taco seasoning according to the package instructions, including the addition of water and allowing it to thicken. Set this aside. Next, add the chopped tomatoes, capsicum, and enchilada/taco sauce to the pan and cook for 5-10 minutes until they soften.

Begin assembling by spreading half of the mince mixture at the bottom of the pan. Place a tortilla on top, similar to assembling lasagna. Cover this with half of the enchilada sauce and vegetable mixture, then sprinkle about 30% of the cheese. Add another tortilla layer, followed by the remaining mince, another tortilla, and finish with the last layer of enchilada sauce and one final tortilla on top.

Generously top with cheese and bake in an oven preheated to 180 degrees Celsius for 15-20 minutes, or until golden brown.

Serve with additional enchilada sauce, a dollop of sour cream, and crisp iceberg lettuce for texture. Add avocado if desired!
